I dont know why they betrayed Lassa,I think maybe
because they did not submit to her teachings?That they are free thinkers,and there for in my eyes they are right!!I may be wrong in this theory ,but from what I have read of them,I do most relate to them and there ways!sorry if that disappoints anyone!The True seam to represent good in a hole form,as where Fallen seem to be more rebellious ,and self thinking.Not likely to follow just because they are told too!!
I guss you could relate it to religion,say True representing the religious{christians ,catholics what have you}And the Fallen represent the none believers, the free thinkers {pagan}like my self!!{Again sorry if I offend!} That is my take on it so far.I chose to think of the Fallen as free thinkers,and the True as following the one cause that they believe in!!

It seems that the Fallen have taken to seeking power of their own rather then using it for the good purposes that the True use it for.
Now, just because they have fallen away from the usual ways doesn't mean they are truly and completely evil.
I believe that there is good in even the most evil person out there ^^
Maybe they betrayed Lassa because they believed she was holding them back from their true potential.

As for your question about fallen vargs: Well, I want to think that generally all vargs are good deep down and most of the time the way we think is influenced by others. I want to think that there is some greater and darker evil in the shadows and working behind the scenes that seeks out vargs with even the slightest doubt toward lassa or anything like that, then it twists the mind and heart to make that grow into utter hatred or lust for power, thus creating fallen vargs and making the whole race go against one another.

That's my crazy theory but it sounds kinda cool.
